Power Banana Bread

This isn't a new recipe, it's been on my blog for months but I just revisited these amazing squares of Heaven again this weekend and had to share it again.  If I'm making them, you know they're easy, they taste great and the nutrition in them isn't too bad either!  Win,win, WIN!

I took this original recipe from here and tweaked it just a tad.  One of the reasons I'm so excited about this bar is that it is customizable! The bananas, eggs and protein powder serve as a great base to add whatever you and/or your kids like.

Here is what Sloane and I threw in our mixer: (click here for the printable recipe)

  • 2 bananas (mine were yellow, not brown)
  • 2 scoops of vanilla protein powder
  • 2 cups oats (I used old fashioned but I think other versions work too)
  • 4 egg whites
  • 1 snack sized container of unsweetened applesauce
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup raisins 



I used my Kitchen Aid mixer and threw everything in.  Put them in the over at 350 degrees.  Let them cook 12-15 minutes and voila!


Here are some other ideas I thought of that would make great mixins:
  • coconut
  • chocolate chips
  • dried blueberries
  • almonds
  • sunflower seeds
  • lemon extract
  • poppy seeds
  • crasins
  • peanut butter

Make sure you store these bad boys in the fridge!
