Make Ahead Breakfast + Link Up Party

I love breakfast.  It's easily my favorite meal of the day.  I could eat breakfast three meals a day and never get bored.

Eggs, bacon, sausage, omelets, quiche, fresh fruit, waffles, pancakes….so much to love and enjoy!  Wanna know what I don't enjoy?  Waiting for breakfast to cook.  When I wake up I want to eat!  Now!  I don't want to stand over a stove or counter top to chop, fry, or bake.  I've got things to do, places to go and other small mouths to feed.  

For that reason I love to make my breakfast ahead of time so all I have to do in the morning is reheat and go (or eat cold).  Mornings are a busy time for most people so why not make it a little easier on yourself?  I strongly believe that prepping meals ahead of time is one of the BIGGEST keys to staying on track with my nutrition. Typically I make one HUGE batch of a breakfast food on Sunday and portion it into five or six smaller servings.  Voila!  Breakfast for the week!  

This week I took a huge leap of faith (take that with a grain of salt as I'm not a great cook) and made breakfast burritos without a recipe!  For someone who isn't confident in their cooking skills, not following a recipe made me really nervous but they turned out GREAT!  

Healthy Frozen Breakfast Burritos



Ingredients: 
  • 1lb Turkey Sausage
  • 6 Eggs
  • 1 Red Pepper
  • 1 Onion
  • 1cup Shredded Cheese
  • 6 Tortillas  
Directions:
1.  Brown turkey sausage and scramble eggs
2.  Chop and sauté peppers and onions (or other veggies of your choice)
3.  On flat tortilla, sprinkle a little shredded cheese and top with eggs, sausage, and veggies
4.  Wrap burrito closed (I didn't have them, but tooth picks would have been useful here)
5.  Lay on tray and put in freeze for a few hours
6.  Once frozen, move burritos into airtight container or wrap in baggie, saran wrap for individual grab    and go style burritos.  

To eat just pop it in the microwave until warm (mine took 2 minutes) eat and enjoy!  Yes, I'm sure you could also put it in the oven.  Don't judge me for using the freakin' microwave please.  

The great thing about these is that they are totally customizable!  Use egg whites, bacon, real sausage, no meat, just veggies, etc. I love to top in them in the morning with a little salsa as well!  Yum-O!  I think these would also be a great pick to take to new parents.  I would have kissed someone if they brought me over a week's worth of breakfast burritos!

  2. Annie...I love this..I actually make breakfast burritos for the kids often. I did in fact make them for our little league team last year when we had early games. I would get up around 6:00 a.m. and make them fresh and wrap in foil and kept them warm in the oven. I wanted the kids to eat something healthy before the game as most parents were feeding the a doughnut or nothing or sugar cereal. I was a mom you either loved or hated LOL

  3. I make about 3things well breakfast anything us one of them. I make egg white omelets a few times a week. These sound great!
